Morning Glory Muffins

Ingredients:

2 cups flour
1 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt
2 cups peeled and grated carrots
1 large apple grated
1/2 cup coconut
1/2 cup chopped walnuts
1/3 cup wheat germ
3 large eggs
2/3 cup oil
2 teaspoons vanilla

Directions:

Whisk together first six ingredients; add next five ingredients and stir. In separate bowl, whisk together last 3 ingredients, then add to dry mix. Bake at 350 for 25/30 minutes in greased muffin tins.
